The distinction
A spice oil is the volatile aromatic fraction, distilled out of the spice — it carries the aroma and the top-note character but leaves the pungency and the colour behind. An oleoresin is a solvent extract containing both the volatile oil and the non-volatile actives: the capsaicin in chilli, the curcumin in turmeric, the piperine in pepper, the colour in paprika.
Which one you need depends on what you are trying to deliver. Flavour houses generally want the oil for aroma and the oleoresin for impact and colour; nutraceutical formulators almost always want the oleoresin, because the active they are claiming on lives in the non-volatile fraction. We supply both against a declared specification, so you are buying a number rather than a name.

For most nutraceutical applications you want the oleoresin.
By declared marker active, assayed per lot: curcuminoids for turmeric, piperine for pepper, capsaicin in Scoville units for chilli, colour value for paprika, gingerols for ginger. The Certificate of Analysis states the number the lot was released against, not a typical value.
Yes, by GC headspace on every solvent-extracted lot. It is the single most important test in this category and the one buyers most often forget to ask for. The clearance certificate accompanies the batch.

Yes. Liquid oleoresins can be supplied plated onto a carrier, water-dispersible with an emulsifier system, or spray-dried for dry blending. Tell us the application — snack coating behaves very differently from a capsule fill.
